      The article presents the study of Gene Lester, plant physiologist of the Agricultural Research Service (ARS), that investigates the concentrations of vital carotenoids and vitamins in 25 commercial microgreen varieties in the U.S. The research methods used by Lester and team to determine the nutritional benefits of microgreens are stated. Moreover, the microgreens which have the highest concentrations of carotenoids and vitamin C, E, and K are also mentioned.
