- Abstract:
The article investigates the effect of the declining quality of soil on the nutrient content of food. It discusses a study published in the 2004 issue of the "Journal of the American College of Nutrition" which documented nutrient decline in vegetables and fruits. According to studies, the nutrient decline is attributed to large-scale farming and commercial agricultural methods that wind up mining soil. Root systems and soil management techniques are suggested to restore carbon matter in soil.
