The article presents information on selecting a combi-oven or an accelerated cooking oven. A combi-oven offers three modes of cooking including steam, circulated hot air or a combination of both. It can be used for reheat foods and to roast or bake, and good for rapid cooking of vegetables and shellfish. In accelerated cooking ovens, some of the best features of the convection oven, microwave oven and the impingement oven are combined to create fastest quality food-producing units.
