      The article focuses on "masgouf," or a fish slowly roasted over a wood fire popular in Iraq. The masgouf was once a popular food fare in Baghdad but restaurants that used to serve it have mostly been shuttered. Although the al-Mahor restaurant still serves the masgouf, the fish used is carp from Syria and is served woth pickled vegetables with elephant garlic.
