Researchers from Henan University in Luoyang, China have conducted a study on the encapsulation and structural characteristics of self-assembled liposomes formed by epigallocatechin gallate (EGCG) and alcohol dehydrogenase (ADH). The results showed that EGCG significantly increased the catalytic activity of ADH and the liposomes effectively trapped EGCG-ADH. The self-assembled liposomes had nanometer-sized particles and demonstrated an excellent self-assembled system. In vitro digestion experiments showed that the gastrointestinal tolerance and antioxidant activity of EGCG-ADH liposomes were higher than those of free EGCG-ADH. [Extracted from the article]
