- Abstract: Inflammation is the front-line biological reaction of the immune system to infections, iritation or injuries. Its persistence determines the installation of chronic inflammation that plays a key role in the development and progression of many chronic diseases, including autoimmunity, metabolic disorders such as atherosclerosis and obesity, but also tumoral pathologies. Studies reveal that various foods, but manly fruits, vegetables and legumes, contain high levels of phytochemicals that have antiinflammatory effects, but their mechanisms of action have not been fully identified. The aim of this paper is to discuss recent findings concerning the antiinflammatory effects of certain foods that can be used as natural modulators of proinflammatory gene expression and, thus, as natural strategies to promote a better health. - Abstract: Inflamația reprezintă primul răspuns biologic al sistemului imunitar la infecții, iritații sau leziuni, ajutând organismul să le limiteze. Persistența acesteia determină instalarea cronicizării inflamatorii, care joacă un rol-cheie în dezvoltarea și în progresia multor patologii, inclusiv bolile autoimune, tulburările metabolice, ateroscleroza și obezitatea, dar și unele patologii tumorale. Studiile arată că diferite alimente, dar în principal fructele, legumele și leguminoasele, conțin niveluri ridicate de fitochimicale ce prezintă efect antiinflamator, dar mecanismele lor de acțiune nu au fost complet identificate. Scopul acestei lucrări este de a rezuma unele investigații recente și constatări privind studiile asupra efectelor antiinflamatorii ale unor alimente care pot fi utilizate ca modulatori naturali ai expresiilor genice proinflamatorii și ca strategie naturală de promovare a unei stări de sănătate îmbunătățită.
